By the time Friday rolls around, you're usually a little burnt out from the week. Relaxing with friends, grabbing a cocktail and enjoying a restful evening are your idea of Friday night fun. Making dinner is not. But it's almost bikini season, and you also don't want to grab fast food or pizza. Make this easy Friday dinner recipe that will give you leftovers all weekend long.
Quick and Easy Friday Dinner Pasta Salad
What You Need:
- Box of pasta (bow ties work great)
- Bag of frozen peas
- Rotisserie chicken
- Fresh broccoli florets
- Grape or cherry tomatoes
- Cheese - cheddar, mozzarella or feta (cubed)
- Salad dressing (this salad dressing recipe from GRUB is great to keep on hand)
What to do:
Boil the pasta according to package directions. While you do that, remove the skin and bones from the chicken , and chop it up into bite-sized pieces. Chop the broccoli florets, and cut the tomatoes in half. Cube the cheese. Throw it all into a large bowl.
When the pasta is cooked, strain out the water and run the pasta under cold water until it is no longer warm. Add it to the bowl of veggies, and toss it all together. Add dressing now, or have your family and friends add dressing to their own servings.
This easy Friday dinner pasta salad will last for several days in the fridge and is great to pack for a sunny picnic or a day at the beach.
