Coconut, Avocado and Lime Popsicle Recipe

Warm, sunny days practically beg for a Popsicle. Unfortunately, the rainbow pops of the past are often filled with artificial colors and chemicals that counteract your efforts to stay healthy. (They also stain your kids’ rashguards when they melt all over them). If you can make a smoothie, you can also whip up a selection of gourmet popsicles. This avocado-lime option is a healthy, filling version that won’t put you into sugar overdrive. Bonus: Chop and freeze the avocado and banana ahead of time to make this into a delicious smoothie.
What You Need:
• 1 avocado, pit and skin removed
• 1 cup cream scooped out of a can of full-fat coconut milk*
• ¼ cup maple syrup or honey
• 1 banana
• 4 TBSP lime juice
• Zest from one lime
Blend all the ingredients until smooth, scraping down the sides of the blender with a spatula. Pour the mixture into popsicle trays and freeze**.
*To get the coconut cream, buy a can of coconut milk. Don’t buy the lite version. Without shaking or mixing the can, put it in the refrigerator overnight. When you open the can the next day, the fattier cream on top should be pretty thick and solid. Scoop that out to use in your Popsicles.
**Don’t have popsicle molds? No worries. Just pour the liquid into small paper or plastic cups. Cover each cup with aluminum foil and poke a Popsicle stick through the foil. The foil will keep the stick centered until the mixture freezes.
